1 cup TVP Mince
1 ¼ cup vegetable broth (reservering ¼ cup)
¾ cup stuffing mix
1 teaspoon minced garlic
½ teaspoon salt
½ teaspoon white pepper
½ cup premium gluten – or other binding agent if you can’t eat gluten
Rice Bran oil for cooking
In a small saucepan, bring the vegetable broth to the boil.
In a medium bowl, combine the TVP, stuffing mix, garlic, salt and pepper, and stir well.
Pour in 1 cup of the broth and mix well until the liquid is absorbed.
Add in the gluten (or binding agent) and add the remaining ¼ cup of broth. Mix till you can see strands of gluten begin to form – or until everything is well combined.
Shape the mixture into four separate cutlets
In a large skillet, fry the cutlets on one side until they are crispy. Turn them and repeat on the other side. Make sure cutlets are hot all the way through.
Serve with potatoes and vegetables.
